सतियों के नाम पे मुझे जलाया , मीरा के नाम पे, जहर
पिलाया ! सीता जैसी अग्नि परीक्षा आज भी जग में
जारी है। कोमल है कमजोर नहीं तू ,शक्ति का नाम ही
नारी है !
एक ऐसी ही शक्तिशाली महिला का नाम है – दीपाली भट्टाचार्य
दीपाली असम की रहने वाली हैं। एक समय ऐसा था कि दीपाली भी सामान्य ज़िन्दगी जीती थी। सुबह उठ के नास्ता बनाना, घर को संवारना, कुछ ऐसा ही दिन गुज़रता था। लेकिन कुछ सालों में परिस्थितियों ने उन्हें एक साधारण से असाधारण महिला बना दिया।
दीपाली ने एक संस्था की स्थापना की है, जिसका नाम है :- प्रकृति, प्रकृति एक ब्रांड भी है। इस संस्था में आचार और नमकीन बनाने का काम किया जाता है। दीपाली रोज़ सुबह उठ कर ‘पीठा टोस्ट’ बनाती हैं जो कि असम के परम्परा में एक खास जगह रखता है। इसको बनाने के लिए गुड़, आटा, नारियल और इलाइची का प्रयोग किया जाता है। लोगो के स्वास्थ्य का ध्यान रखते हुए दीपाली उसे तलने के जगह पर बेक कर लेती हैं। उनके पड़ोस में मिठाई दुकान है,जो इनसे हर रोज़ 60 पीठे लेते हैं।
दीपाली हमेशा कुछ नया बनाने की कोशिश करती रहती हैं। अभी तक उन्होंने लगभग 30 नए किस्म के आचार बनाये हैं। आपको यह जान कर बहुत अलग लगेगा कि दीपाली ने मशरूम, नारियल और हल्दी के भी आचार बनाये हैं और लोगो ने खूब पसंद भी किया है। वह सभी चीज़े हाथो से ही बनाती हैं और इस काम मे उनकी बेटी – सुदीत्री भी उनका साथ देती है।
करीब 250 आचार के डब्बे हर महीने तैयार किये जाते हैं और बेचे जाते हैं। ये आचार केवल गुवाहाटी ही नही,बल्कि देश के और भी हिस्सो में भेजे जाते हैं, जैसे:- दिल्ली, राजस्थान, बैंगलोर आदि। दीपाली की सालाना आय लगभग 5,00,000 रुपये हैं। दीपाली के पति का देहांत वर्ष 2003 में ही हो गया था। उनकी मृत्यु दिल के दौरे से हुई थी। उनकी उम्र भी ज्यादा नही थी, मात्र 40 वर्ष थी। पेशे से वे असम में एक शिक्षक थे। वो बहुत गुणवान और नेक विचार वाले व्यक्ति थे। उन्होंने थिएटर भी किया। स्कूल में वो बच्चो को विज्ञान, गणित पढ़ाते थे और संगीत भी सिखाते थे। उनके गुज़र जाने के बाद अब दीपाली अपने बेटी और सास के साथ रहती हैं ।
वह बताती हैं कि जब सब कुछ ठीक था तो दोनों घर मे ही ऐसे कामो के शुरुआत करने के बारे में प्लान किया करते थे और उनके पति ने ही प्रकृति नाम सुझाव में दिया था। उनके सपनों को पूरा करने के लिए दीपाली ने इसका नाम प्रकृति रखा और आज एक सफल कारोबारी बन चुकी हैं।
दीपाली के हाथों में शुरू से ही एक जादू था। परिवार से लेकर उनके रिश्तेदार, दोस्त सभी उनके आचार के दीवाने थे। तभी ये ख्याल आया कि इसमें आगे बढ़ा जा सकता है। दीपाली ने अपने फर्म को वर्ष 2015 में पंजीकृत कराया और दृढ़ संकल्प के साथ आगे बढ़ी।
पति के देहांत के बाद दीपाली को ही घर सम्हालना था, और इस बड़ी जिम्मेदारी को उन्होंने पूरे समर्पण के साथ उठाया। आगे चलकर अलग-अलग प्रतिभागितायों में उन्होने हिस्सा भी लिया, के बार जीत भी हासिल हुई । पुरस्कार में दीपाली को बर्तनों के सेट मिलते थे तो कभी नकद राशि मिलती थी।
दीपाली ने 10,000 के निवेश के साथ ‘प्रकृति’ की नीव रखी। और फिर क्या, शुरू हो गया आचार का काम। लहसून, भट जोलोकिया, चिकन, मछली, इमली आदि का आचार बनना शुरू हुआ और लोगो ने खूब पसंद किया। फिर उन्होंने रेडी तो ईट का कॉन्सेप्ट लाया, जिसमे पहले से ही तैयार नास्ता होता था । जैसे:- मुढ़ी, चिवड़ा, चावल का पाउडर ,चीनी का मिश्रण आदि होते थे। दीपाली अपने स्वादिष्ट दही बडे के लिए भी बहुत प्रसिद्ध है और उन्हें बहुत आर्डर भी आते हैं।
शादी से पहले दीपाली गुवाहाटी से 300 किलोमीटर दूर जोरहाट में रहती थीं। वही से उन्होंने अपनी स्कूली शिक्षा प्राप्त की। देवीचरण बरुआ कॉलेज से उन्होंने बैचलर डिग्री हासिल किया है और पढ़ाई के बाद 1990 में उनकी शादी हो गयी। दीपाली ने शुरू से ही अपने पिता को मसाले का कारोबार करते देखा है। इनके परिवार का भी एक प्रसिद्ध ब्रांड था , जिसका नाम था गोंधराज मसाला। उसी मसाले से उनके घर का आचार बनाया जाता था जो बहुत स्वादिष्ट हुआ करता था। इस आचार बनाने के प्रक्रिया को वो बहुत ध्यान से देखती थी। बाद में उनके भाई के गुज़र जाने के बाद वो फर्म बन्द कर दिया गया।
दीपाली की सास भी बहुत अच्छी कुक हैं जिनसे उन्होंने खाने के बारीकियों को सीखा जो आज उनके काम आ रहा है। प्रकृति से पहले उन्होंने एक होम फूड डिलीवरी शुरू किया था जिसके लिए एक स्कूटर भी खरदा गया था। जिसमे लोग दीपाली के हाथ के बने इडली, आलू चप , दही बडे आदि खूब पसंद करते थे।
बहुत से प्रतियोगिता में भाग लेना दीपाली के लिए वरदान साबित होता था। एक बार उन्होंने नारियल विकाश बोर्ड ने उनके डिश की सराहना करते हुए उन्हें 2005 में एक मौका दिया कि वो कोच्चि जा के 10 दिन की ट्रेनिंग ले सके।जिसमे उन्होंने नारियल से जुड़े कई डिशों को बनाना सीखा। उसमे उन्होंने नारियल की मिठाई, केक , आइस क्रीम, आचार बनाना सीखा।
वहां से लौटने के बाद, दीपाली ने उस एक्सपेरिएंस को औरों में बांटा, उन्हें भी वो सीख दी जिससे महिलाओं को फायदा हुआ। वर्ष 2012 तक उन्होंने कई पत्रिकाओं में अपने रेसिपीज को छपवाया भी। लोग इनके डिशेस को पढ़ते थे, उसके विधि को पढ़कर सीखते थे। लेकिन इसके साथ उन्होंने प्रकृति को ब्रांड बनाने की ठान ली थी जो आखिरकार 2015 में एक पंजीकृत संस्था हो गयी (एफएसएसएआई)।
प्रकृति का सारा काम दीपाली के घर से ही किया जाता है। चाहे वो आचार बनाना हो या पीठा बनाना हो या पैकेजिंग का काम हो । साथ ही दीपाली बदलाव करती रहती हैं जिससे लोगो को स्वस्थ रखा जाए और स्वाद भी बना रहे।
कई इंजीनियर, डॉक्टर, प्रोफेसर आदि इनके पास दूर दूर से आते हैं। इनके टोस्ट पीठा को जो एक बार चख लेता है वो बार बार यहाँ आता है। ज्यादातर, जब हम आचार बाहर से खरीदते हैं तक उसमे तेल की मात्रा बहुत होती है। जिसे हम बार बार खाने से परहेज करते हैं, लेकिन दीपाली के सामानों में ये समस्या नही है। वो बिल्कुल शरीर के अनुकूल होता है।
बात यदि दीपाली और उनकी बेटी सुदीत्री की करें तो दोनों एक दोस्त की तरह रहते हैं। दोनों ने बहुत मुश्किल वक़्त भी देखा है। किसी ने अपना पति खोया तो उसी वक़्त किसी के सर से उसके पिता का हाथ उठ गया। आज दोनों खूब लग्न से इस काम को आगे बढा रही हैं।
उनकी बेटी ने 2015 में इलेक्ट्रॉनिक इंजीनियरिंग की पढ़ाई पूरी की और कुछ सालों तक दूरसंचार कंपनियों में काम भी किया। उसके बाद नौकरी छोड़ दी। अपनी तकनीकी ज्ञान का उपयोग आज सुदीत्री अपने माँ के बिज़नेस को आगे बढ़ने में कर रही हैं। ट्विटर, व्हाट्सएप और फेसबुक जैसे सोशल प्लेटफार्म से वो प्रकृति को ज्यादा से ज्यादा लोगो तक पहुँचा रही हैं। साथ ही अपने ब्रांड का फोटोशूट भी करती हैं।
दीपाली का पूरा जीवन और उनके कठिन कदम हमे ऊर्जा से भर देते हैं। हमे इनसे काफी प्रेरणा मिलती है। किस प्रकार उन्होंने अपने परेशानी के दिनों को अवसर में बदल दिया। हम तो इनकी कहानी से सीखते ही हैं लेकिन दीपाली की बेटी के लिए भी उनकी माँ सबसे बड़ी प्रेरणा हैं। दीपाली के सफल कार्य को खेती ट्रेंड का सलाम।
