सपने को साकार करने के लगन ने दिलाया-“स्टार्टअप अवार्ड”
अपने कई बार ये सुना होगा कि बड़ी कंपनी में नौकरी पाने के लिए बहुत से ऐसे शख्श है जो सबकुछ चोर देते है पर आज हम ऐसे शख्श से आप सबको परिचित करवाएंगे। जिसने अपने सपने को साकार करने के लिए अपनी माइक्रोसॉफ्ट जैसी बड़ी कंपनी की नौकरी छोड़ दी।क्योंकि इन्हें कटहल को प्रशिद्ध करना है। उन्हीने बड़ी कंपनी की नौकरी इसलिए छोड़ी क्योंकि वह कटहल के सारे फूड्स आइटम बना के लोगो तक पहुंचा सके।
कौन है ये शख्श जिसने पैसे और सपने में से “सपने ” को चुना:
यह है जेम्स जोशेफ जो केरल के कोची में रहते है तथा माइक्रोसॉफ्ट में काम करते थे । पर अपने सपने को साकार करने के लिए उन्होंने 8 साल पहले ही नौकरी छोड़ दी और अपनी फ़ूड कंपनी शुरू की। क्योंकि वह कटहल को दुनिया भर में प्रसिद्धि दिलना चाहते थे ।
इस बात से हम सब वाकिफ है कि सबसे अधिक उत्पादन कटहल का केरल में होता है और इसकी खासियत यह है कि इसे हम सब्जी और फल दोनो के साथ कई तरह से इस्तेमाल कर सकते है।
सपने की शुरुआत:
हम देखते है कि आखिर यह सब शुरू कब हुआ एक बार जेम्स अपने मित्रों के साथ होटल ताज गए खाना खाने। वहाँ पर उन्होंने मशरुम और मीट खाया। परंतु जेम्स को लगा कि इन दोनों से ज़्यादा सेहतमंद तो कटहल है। तो ये क्यों नही बनाया गया। उनसे रहा नही गया।
और आखिरकार उन्होंने शेफ से पूछ ही लिया कि इनदोनों से अधिक तो कटहल सेहतमंद हैं तो आपने ये क्यों नही बनाया। तब शेफ ने अपनी परेशानी बताते हुए बोला-“कि एक तो कटहल पूरे साल नही मिलता है और कटहल महकता भी है और चिपकता भी हैं इसलिए हम इसे नही बनाते”।
जेम्स को यह बात खटकी तो उनहोनर मन बनाया की जब कटहल का मौसम आएगा तब वो शेफ से व्यंजन बनवाएंगे और उन्होंने ऐसा ही किया । उन्होंने आलू टिक्की बर्गर की जगह कटहल बर्गर बनवाई जो कि बहुत ही स्वादिष्ट था और यह से उन्होंने अपने सपने की नींव रखी।और अपना फ़ूड बिज़नेस शुरू किया।
दृढ़ निश्चय ने सफल बनाया:
जब वह अपने शहर आये उन्होंने कटहल की प्रोसेसिंग शुरू करने की सोची। तब उन्हें पता चला कि कटहल में पानी की मात्रा ज्यादा होती हैं। तो कटहल को स्टोर करने के लिए फ्रीज- ड्रायर का सहारा लेकर हम साल भर इसे स्टोर कर के रख सकते हैं। और इससे एक और काम यह भी होगा कि यह पूरे साल बाजार में मिल सकता हैं।
जेम्स के प्रोसेसिंग यूनिट-अप और बिज़नेस का नाम –“JACKFRUIT-365” हैं। उन्होंने यह नाम इस तर्क पे रखा क्योंकि 365 दिन लोग इसको कहा सकते है।
जब 2013 में जेम्स ने अपना बिज़नेस शुरू किया तब सिर्फ कटहल के प्रोसेसिंग कर के स्टोर करना शुरू किया। प्रोसेसिंग के बाद 82% तक वजन ने कम हो जाते हैं। इसके एक फायदा ये होता हैं कि यातायात लागत और मेहनत दोनो कम लगती हैं।
180 ग्राम के पैकेट का आप सामान्य तापमान पर साल भर स्टोर कर के रख सकते हैं। जब कोई ग्राहक इसे हल्के गर्म पानी मे डालेगा तो यह लगभग आपको 1 किलोग्राम कटहल मिलेगा।
जब जेम्स का फ्रोजेन कटहल का काम सफल हो गया तो उन्होंने कटहल का आटा लॉन्च किया। सुनने में थोड़ा अटपटा लगे पर उन्होंने ये कर के दिखाया । जेम्स 49 वर्ष के हैं और इसके लिए जेम्स को “नेशनल स्टार्टअप इंडिया” अवार्ड भी मिला।
जैसे कि हम सब जानते है कि कटहल फाइबर से भरपूर हैं और डाइबिटीज़ मरीजो के लिए कार्बोहायड्रेट का कटहल अच्छा जरिया हैं। कटहल में ग्लुकोज़ लेवल गेहू , चावल से काफी कम होता हैं।
2014 की बात हैं कि जमव्स पुजारी से बात कर रहे थे कि वह चावल के स्थान पर कच्चा कटहल खाते हैं और इसका परिणाम यह है कि उनका इन्सुलिन कम होने लगा। क्योंकि कटहल फाइबर से भरपूर हैं और आसानी से पच जाता हैं। और शुगर को भी कम करता हैं।
प्रेरणा ले कर सपने साकार करने तक का सफर:
जेम्स ने पूर्व राष्ट्रपति डॉ. A.P.J.अब्दुल कलाम से प्रेरणा ली। और उन्होंने कटहल को सामान्य डाइट में शामिल करने की सोची । जेम्स ने अपनी पुस्तक-“गॉड ऑन आफिस” छपवाइ। इस पुस्तक को जब राष्ट्रपति कलाम ने पढ़ा तो प्रभावित हो कर जेम्स को मिलने बुलाया। तभी जेम्स ने अपने सपने के बारे में कलाम को बताया।
जेम्स बताते हैं-“कुछ मिनट शांत रहने के बाद उन्होंने कहा की हमे लोगो के दैनिक खानपान में जोड़ने के बारे में सोचना चाहिए। अगर रास्ता मिल गया तो मैं आपकी मार्केटिंग में मदद करूँगा।परंतु दुर्भाग्यपूर्ण वह हम सबको छोड़कर चले गए।लेकिन उनकी शुभकामनाएं आज भी मेरे साथ हैं”।
5 वर्ष बाद जेम्स को सफलता मिली और वह कटहल का आटा बनाने में कामयाब हुए परंतू इसके लिए उन्हें बहुत से असफलताओं को भी देखना पड़ा।
जेम्स इसमे सफल तो हो गए परंतु अभी परेशानी पूरी तरफ से खत्म नही हुए थीं। क्योंकि उन्हें आटा ऐसा बनाना था कि उत्तर भारत मे रोटी बनाने के काम आए दक्षिण भारत मे इडली और डोसा। परन्तु उनकी मेहनत रंग लाई और आखिरकार उन्होंने कटहल का आटा तैयार कर ही लिया। कटहल की आटे की कीमत 10 रुपये प्रतिदिन हैं।जो कि इन्सुलिन के एवज़ में काफी सस्ता हैं।
सपने से धरातल पर उतारने की कोशिश:
2018 में जेम्स ने इसे प्रयोग करने के बारे में सोचा डॉ. नायर जिन्हें डाइबिटीज़ हैं। उन्होंने इस आटे का सेवन किया जिससे उनका शुगर कम होने लगा तथा फोर्ब्स और कोलेस्ट्रॉल भी कम हुआ। नायर हफ्ते में लगभग 3 बार एक्सरसाइज करते है तथा 60-70 किलोमीटर दौड़ते हैं।
नायर बताते है उन्होंने दवाइ के साथ आटा का ज़वाब भी शुरू किया और उन्हें लगा कि आटा और 2 गोली शुगर को कम कर रहे हैं। 3 महीने खाने के बाद मेरा टेबलेट और इन्सुलिन इन्टेक कम हो गया। अब मैं 4 महीने से सिर्फ आटा का सेवन करता हूं कोई दवाइयां नही खाता।
यह जगजाहिर है कि कटहल से ब्लड शुगर कम होता हैं इसलिए डाइबिटिक मरीजों के लिए ये एक वरदान साबित हुआ। अमेरिकन डाइबिटीज़ एसोसिएशन ने बताया कि हेमिग्लोबिन,FBG और PPG कटहल से कम होता हैं।इसलिए डाइबिटिक मरीजो को नियमित इसका सेवन करना चाहिए।
हर दिन अगर आप कटहल का 30 ग्राम आटा भी सेवन करते हैं तो आपके लिए उत्तम हैं।यह जेम्स का कहना है।
