बनारस को देवताओं की नगरी माना जाता है।काशी भगवान शिव की प्रिय नगरी माना जाता है। बनारस की हर चीज़ मन मोहने वाली होती है चाहे वो मंदिर हो,गंगा आरती हो या पकवान।बनारस में खाने की चीज़े भी बहुत प्रसिद्ध है। बनारस की कुल्हर की चाय,पुड़ी, सब्जी ,जलेबी का नाम सुनते ही मुँह में पानी आने लगता है।

आज जहाँ ज्यादातर लोग बाहर का खाना खाने के पहले सौ बार सोचते है वही बनारस में लोगो को सुबह-सुबह भरपूर नास्ता चाहिए होता है ताकि उनका पूरा दिन अच्छा गुजरे।ऐसा वहाँ के लोगो का मानना हैं।

दुकानें ही दुकानें:-

बनारस में खाने की दुकानों की कमी नही है बात चाहे लंका पर चाची की दुकान की हो या सुरेश की कचौड़ी की या मैदागिन पांडेयपुर की सारे दुकानों की अपनी अपनी अहमियत है। जो लोग यहाँ खाने जाते है तारीफ करते नही थकते।यहाँ पेट तो सबका भरता है परन्तु मन किसी का नही पड़ता इतने स्वादिष्ट खाने से।

सुबह से ही मिलने लगती है पुड़ी-सब्जी:-

बनारस में आपको सुबह 5 बजे से ही कचौरी सब्जी मिलने लगती है 6 बजे तक तो इतनी भीड़ हो जाती है कि आपको बैठने या खरे होने की भी जगह नही मिलेगी दुकान पर।बनारस में आपको 11 बजे तक कचौड़ी सब्जी मिलेगी।क्योंकि 11 बजे के बाद यह समोसा और मिट्टी लौंगलता बनने लगता है और भीड़ इसके लिए भर शुरू होने लगती है।

रमेश की दुकान बनारस के लंका बाजार में है रमेश पूरी सब्जी और जलेबी की दुकान चलाते हैं।उनका कहना है कि वो 4 बजे सुबह से ही अपनी दुकान की सफाई में लग जाते है क्योंकि 1 घंटे से अधिक समय दुकान की सफाई में ही लग जाता है।सारे बर्तन एक दम साफ होने चाहिए क्योंकि बनारस की मान्यता है कि पहली पूरी सब्जी भगवान को चढ़ती है।

सालो से चलती आ रही है दुकानें:-

रमेश का कहना है कि उनकी दुकान 50 वर्ष पुरानी है।मतलब वो उनकी पुस्तैनी दुकान है।साथ ही साथ रमेश ये भी कहते है को हमारी दुकान पुस्तैनी होने के साथ साथ ग्राहक भी पुस्तैनी है क्योंकि पहले उनके दादा जी आते थे फिर पिताजी फिर वो खुद आ रहे है।तब से अब तक यही सिलसला चलते आ रहा है नही बदली वो है हमारे दुकान के पूरी सब्जी का स्वाद और हमारी कोशिश है कि वो कभी न बदले।

रमेश के दुकान की मिक्स सब्जी बहुत पसंद की जाती हैं।मिक्स सब्जी में रमेश कभी चना,कोहरा,आलू,मटर डाल के सब्जी बनाते है तो कभी चना,पालक और बैगन डाल के मिक्स सब्जी बनाते हैं जिससे ग्राहक और भी आकर्षित होते है उनकी दुकान की तरफ़।

सब्जी की ही तरह रमेश के दुकान में कचौरी बनाने की भी अलग विधि है।जलेबी,कचौड़ी और सब्जी रमेश की दुकान में उनका पूरा परिवार मिल के बनाता है।इस कोरोना महामारी में रमेश ने अपने दुकान में साफ-सफाई का पूरा ध्यान रखा हैं।साथ ही साथ उनकी कोशिश ये रहती है कि कोई ज्यादा देर तक दुकान पे ना रुके।

कचौड़ी गली है प्रसिद्ध:-

बनारस में कचौड़ी गली बहुत ही प्रशिद्ध है।जिसके बगले में ही मणिकर्णिका शमशान घाट है।इसलियर यहाँ 24 घंटे कचौड़ी सब्जी मिलती हैं।जो लोग भी घाट पर आते है दाह संस्कार करने।वो दाह संस्कर करने के बाद कचौड़ी गली जाते हैं।कचौड़ी सब्जी खाने।कचौड़ी गली दिन रात ग्राहकों से भरी रहती हैं।

काम करने वाले रवि का कहना है की जब वो पहली बार दुकान पर थे और कुछ लोग दाह संस्कार करने के बाद हँस-हँस कर कचौड़ी सब्जी खा रहे थे और मांग रहे थें।तो मेरे मन मे ये बात आया कि कैसे लोग है परन्तु समय के साथ मैं भी सबके साथ घुल-मिल गया।क्योंकि यही तो जिंदगी है।

बनारस में आपको हर सुबह हर गली में कचौड़ी,सब्जी और पूरी मिलती है।बनारस की सारी दुकानों में सुबह-सुबह यही नास्ता मिलेगा आपको।कुछ दुकाने जो अधिक प्रशिद्ध है उन दुकानों में तो लंबी लाइन लगती है कचौड़ी,सब्जी और पूरी खाने के लिए।
